This has to be one of the best recipes in my whole world! Life can get really busy and making sure you are getting a healthy snack when you are busy can be a challenge, to say the least! I came up with the recipe by mixing a couple of recipes together and swapping some things out because I can’t eat a few things and I must say, it is so quick and easy to make.
It started as a very bland mixture of rolled oats, some vanilla protein powder, and some almond milk. I was looking a for something I could make easily that I could use as a healthful snack when I am on the go.
I’m not a fan of vanilla and I was having a craving for some chocolate. I had some chocolate whey protein, cocoa powder and a few leftover dark chocolate chips in the cupboard. Perfect!
Keep these healthy and a great nutrient dense snack to tide you over between meals; complex carbs, natural sugar, dark chocolate goodness and some healthy fats.
These could easily be turned into something that would compare to a regular chocolate bar and not so healthy if you are substituting with the not-so-great milk chocolate chips. Stick with the unsalted nuts and don’t go overboard on the peanut butter. 🙂 (I know you want to!)
Ingredients:
2 ½ cups whole oats
5 scoops chocolate protein powder (I used Whey protein)
½ cup raisins (optional, but better with)
½ cup crushed mixed nuts (optional)
½ cup 80% dark chocolate chips
2 tsp cocoa powder
½ cup natural peanut butter
½ cup unsweetened almond milk
Instructions:
Line a 9×13” pan with wax paper
Mix all the ingredients together in a bowl
Firmly push mixture into pan and evenly spread out
Put in freezer for 20 minutes to set.
Remove from pan and cut into 12 -14 bars
